How to prepare Spanish Tortilla de Patatas
Tortilla de patatas, also known as Spanish omelette, is a traditional dish from Spain that is made with eggs, potatoes, onions, and olive oil.
Ingredients:
4 medium potatoes
1 onion
6 eggs
Salt and pepper to taste
Olive oil
Instructions:
1.- Peel the potatoes and slice them into thin rounds.
2.- Peel the onion and slice it thinly as well.
3.- Heat a large non-stick pan over medium heat and add enough olive oil to cover the bottom.
4.- Add the potatoes and onion to the pan and cook, stirring occasionally, until the potatoes are tender and lightly browned. This should take about 15-20 minutes.
5.- While the potatoes are cooking, crack the eggs into a large mixing bowl and whisk them until they're well beaten.
6.- Add salt and pepper to taste.
7.- Once the potatoes are cooked, remove them from the pan with a slotted spoon and add them to the egg mixture. Mix well.
8.- Pour the egg and potato mixture back into the pan and spread it out evenly with a spatula. Lower the heat to low and let it cook for 5-7 minutes or until the bottom is lightly browned.
9.- To flip the tortilla, use a large plate to cover the pan and flip it over. Then slide the tortilla back into the pan with the uncooked side down. Cook for an additional 5-7 minutes or until the other side is lightly browned.
10.- Once the tortilla is fully cooked, remove it from the pan and let it cool for a few minutes before slicing and serving.
11.- Serve hot or cold, cut into slices.
